    GONDRE BAP is a traditional Korean healthy meal made by cooking rice with GONDRE, a type of wild vegetables. GONDRE, also known as Korean thistle or Cirsium japonicum, is native to the Gangwon-do, Republic of Korea, and has been used for medicinal and culinary purposes since ancient times. The name 'GONDRE' is derived from a regional dialect in Gangwon-do, while the formal name is 'Goryeo Thistle'. GONDRE is known for thriving in harsh environments and is one of the easiest thistle varieties to consume, making it a significant food resource in Gangwon-do.

     

     

    GONDRE BAP is renowned for its mild flavor, unique scent, and rich nutritional content. To prepare it, GONDRE is boiled, dried, and then chopped into manageable pieces before being cooked with rice. During this process, the flavor of the GONDRE infuses the rice, creating a distinctive taste. It is typically enjoyed with soy sauce or DOENJANG (Soybean paste) as a condiment. Traditionally, it was primarily eaten in Gangwon-do, but due to its light and unique taste, it has gained popularity all over the country. Additionally, GONDRE is noted for its rich nutrients, including carbohydrates, calcium, and vitamin A, making it a celebrated health food. Today, GONDRE-BAP has evolved into various dishes, such as GONDRE-BIBIMBAP and GONDRE-DEOPBAP.
