  • Seolleongtang (Ox bone soup)

Seolleongtang refers to a food made by boiling various parts of beef together in a stew or soup with rice. It’s also called ‘Seolnongtang’ because the soup is clear and has a deep and rich taste. There are several theories about the origin of seolleongtang. There is a theory that it originated from beef soup that the king made during the Joseon Dynasty to conduct events and ancestral rites and distribute them to those who participated in the ancestral rites. Another theory is that the Mongolian recipe of boiling meat in plain water was brought to Korea and made into today's seolleongtang. This tradition continued and has become a daily food for Koreans today.

Seolleongtang is usually made by boiling ox bones, beef, beef offals, etc. for a long time and then mixing it with rice. The soup is white and clear, and boasts a savory and deep flavor. In the process of making seolleongtang, bones and meat are boiled for a long time, so it is rich in nutrients such as collagen, which is good for your health. Additionally, the taste can be adjusted by adding various seasonings and sauces such as salt, red pepper powder, and pepper. It’s usually served with a diced radish kimchi and cabbage kimchi. Seolleongtang is a representative traditional food in Korea and is also popular as a health food that warms the body during the cold winter months.
